Baked Fish with Almonds

Baked Fish with Almonds
Recipe Type: Entrees

Serves: 2
Ingredients
  • 2 mild, white fish filets of your choice (Swai is pictured, but flounder, sole and trout are great too!)
  • ¾ cup slivered almonds
  • 1 tablespoon butter
  • 2 tablespoons of lemon juice
Instructions
  1. Bake the fish at 450 degrees until done. Mild white fish fillets usually take about 10 minutes
  2. Just before the fish is done, melt the butter in a pan.
  3. Add the almonds and stir so they are fully coated.
  4. Add the lemon juice. (Be Careful! The lemon juice can spatter!)
  5. Stir the almonds constantly. Once you add the lemon juice they brown quickly.
  6. Remove the pan with the almonds from the heat and stir a bit more so they don’t burn.
  7. Top each fillet with half of the almond mixture.
