Baked Fish with Almonds

Ingredients
- 2 mild, white fish filets of your choice (Swai is pictured, but flounder, sole and trout are great too!)
- ¾ cup slivered almonds
- 1 tablespoon butter
- 2 tablespoons of lemon juice
Instructions
- Bake the fish at 450 degrees until done. Mild white fish fillets usually take about 10 minutes
- Just before the fish is done, melt the butter in a pan.
- Add the almonds and stir so they are fully coated.
- Add the lemon juice. (Be Careful! The lemon juice can spatter!)
- Stir the almonds constantly. Once you add the lemon juice they brown quickly.
- Remove the pan with the almonds from the heat and stir a bit more so they don’t burn.
- Top each fillet with half of the almond mixture.
